Ingredients

  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup softened butter
  • ¾ cup sugar
  • 2 eggs
  • ¼ cup sour cream
  • 2 tablespoons milk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • ½ cup chopped pistachios
  • ¾ cup powdered sugar (for glaze)
  • 1 to 2 tablespoons lemon juice (for glaze)
  • 1 tablespoon chopped pistachios (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan, lining it with parchment paper.
  2. In a bowl, combine flour, baking powder, baking soda, and salt.
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs, sour cream, milk, lemon juice, and lemon zest to the mixture and beat until smooth.
  5. Gradually stir in the dry ingredients, being careful not to overmix, then fold in chopped pistachios.
  6. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until golden brown and a toothpick comes out clean.
  7. Allow the loaf to cool completely, then prepare the glaze by mixing powdered sugar with lemon juice and drizzle over the loaf. Garnish with additional pistachios.

To maintain freshness, wrap tightly and store at room temperature for 2-3 days, refrigerate for up to a week, or freeze for up to 2 months.
