- 4 chicken breasts, pounded thin
- 1/4 cup fresh lemon thyme leaves
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup seasonal vegetables (e.g., asparagus, bell peppers, carrots)
- 1/2 cup chicken broth
- 1 tablespoon butter
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix lemon juice, lemon zest, olive oil, and fresh thyme.
- Season the chicken breasts with salt and pepper, then brush with the lemon thyme mixture.
- Place some seasonal vegetables on each breast and roll them up tightly. Secure with toothpicks if necessary.
- In a skillet, heat some olive oil over medium heat and sear the roulades until golden brown on all sides.
- Transfer the roulades to a baking dish and pour chicken broth over them.
- Bake for about 20-25 minutes, or until the chicken is cooked through.
- Remove from the oven, let rest for a few minutes, then slice and serve with the vegetables and pour some pan sauce on top. Enjoy your elegant dish!
Notes
Pound the chicken thinly for even cooking. Use fresh lemon thyme for better flavor, but dried thyme works too. Check that the internal temperature of the chicken reaches 165°F (75°C).
