Delightful Linzer Cookies with almond flavor and raspberry jam, perfect for celebrations or a sweet snack.

- 1 cup unsalted butter, softened
- 2/3 cup sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup ground almonds (or almond flour)
- 1/2 teaspoon salt
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Mix in the vanilla extract to the creamed butter and sugar.
- In another bowl, combine the flour, ground almonds, and salt. Gradually add this mixture to the buttery mix.
- Roll out the dough on a floured surface to about 1/8-inch thick.
- Use a cookie cutter to cut out shapes from the dough, cutting smaller shapes in half for a peekaboo effect.
- Place the cookies on a baking sheet and bake for 8-10 minutes, or until lightly golden.
- Allow the cookies to cool. Spread raspberry jam on the whole cookies and top with the cutout cookies.
- Dust with powdered sugar before serving.
Notes
For easier rolling, let the butter soften but don’t let it melt. You can try different flavors of jam or spices to customize the recipe.
