A decadent dessert featuring a creamy cheesecake filling swirled with butterscotch and a crunchy graham cracker crust, topped with whipped cream.

- 2 cups graham cracker crumbs or digestive biscuits, finely crushed
- 1/2 cup unsalted butter, melted
- 2 tbsp brown sugar
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 cup sour cream
- 2 tsp vanilla extract
- 1/2 cup butterscotch sauce plus extra for swirling
- 1 cup whipped cream (for topping)
- 1/2 cup butterscotch sauce (additional for topping)
- 1/2 cup crushed cookies or biscuits (for garnish)
Instructions
- Preheat your oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan with heavy-duty foil.
- In a medium bowl, combine the graham cracker crumbs, melted unsalted butter, and brown sugar. Stir until it resembles wet sand.
- Press the mixture into the bottom of the prepared springform pan and bake for 10 minutes. Allow to cool slightly.
- In a mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing on low speed, followed by sour cream, vanilla extract, and butterscotch sauce until just combined.
- Pour half of the cheesecake filling into the crust, swirl in some butterscotch sauce, then pour the remaining filling, repeating the swirl.
- Place the springform pan in a larger baking dish and add hot water halfway up the side of the springform pan.
- Bake for 55-65 minutes until the edges are set but the center is slightly jiggly. Let cool in the oven for 1 hour.
- Remove from the water bath, cool to room temperature, and refrigerate for at least 4 hours.
- Before serving, top with whipped cream, additional butterscotch sauce, and crushed cookies.
Notes
Let the cheesecake sit at room temperature for 10-15 minutes before serving for best flavor and texture.
