Description

Ingredients

  • 4 large russet potatoes, diced
  • 2 tablespoons oil
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices bacon, cooked and chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped pickles
  • 2 tablespoons parsley
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 2 cups shredded cheddar
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon salt (for cheese sauce)
  • 1/4 teaspoon pepper (for cheese sauce)

Instructions

  1. Dice the russet potatoes into roughly 1/2-inch cubes and pat them dry with paper towels.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of oil.
  3. Add the diced potatoes in an even layer and let them sear for 6–8 minutes until golden brown, then flip and continue until crispy.
  4. Season potatoes lightly with salt and pepper towards the end of cooking.
  5. In a separate skillet, brown the ground beef, breaking it up and seasoning with garlic powder, onion powder, paprika, salt, and pepper for about 6–8 minutes.
  6. Fold the seasoned beef into the skillet of crispy potatoes.
  7. Crisp the bacon in a separate pan, chop, and add most of it to the beef-and-potato mixture.
  8. In a medium saucepan, melt butter and whisk in flour to create a roux, cooking for 1 minute.
  9. Gradually add milk and cook until it thickens, then stir in cheddar, mustard powder, salt, and pepper until melted.
  10. Pour the cheese sauce over the potato mixture, folding gently to coat.
  11. Top with reserved bacon, diced tomatoes, chopped pickles, and parsley.
  12. Serve hot directly from the skillet.

Notes

For extra flavor, adjust seasonings to taste or add hot sauce for heat.
