- 4 large russet potatoes, diced
- 2 tablespoons oil
- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 6 slices bacon, cooked and chopped
- 1/2 cup diced tomatoes
- 1/2 cup chopped pickles
- 2 tablespoons parsley
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups milk
- 2 cups shredded cheddar
- 1/2 teaspoon mustard powder
- 1/2 teaspoon salt (for cheese sauce)
- 1/4 teaspoon pepper (for cheese sauce)
Instructions
- Dice the russet potatoes into roughly 1/2-inch cubes and pat them dry with paper towels.
- Heat a large skillet over medium-high heat and add 2 tablespoons of oil.
- Add the diced potatoes in an even layer and let them sear for 6–8 minutes until golden brown, then flip and continue until crispy.
- Season potatoes lightly with salt and pepper towards the end of cooking.
- In a separate skillet, brown the ground beef, breaking it up and seasoning with garlic powder, onion powder, paprika, salt, and pepper for about 6–8 minutes.
- Fold the seasoned beef into the skillet of crispy potatoes.
- Crisp the bacon in a separate pan, chop, and add most of it to the beef-and-potato mixture.
- In a medium saucepan, melt butter and whisk in flour to create a roux, cooking for 1 minute.
- Gradually add milk and cook until it thickens, then stir in cheddar, mustard powder, salt, and pepper until melted.
- Pour the cheese sauce over the potato mixture, folding gently to coat.
- Top with reserved bacon, diced tomatoes, chopped pickles, and parsley.
- Serve hot directly from the skillet.

For extra flavor, adjust seasonings to taste or add hot sauce for heat.
