Ingredients

  • 3 tablespoons olive oil
  • 1 pound ground beef
  • 1 sweet onion, chopped
  • 1 orange bell pepper, seeded and chopped
  • 3 cloves garlic, chopped
  • 1 (14 ounce) can fire roasted diced tomatoes
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 small head green cabbage, cored and chopped
  • 2 cups shredded cheddar or jack cheese

Instructions

  1. Gather and prep your vegetables.
  2. Measure your spices.
  3. Preheat your oven to 375°F (190°C).
  4. Brown the ground beef in a skillet over medium high heat.
  5. Sauté chopped onion and bell pepper with the ground beef.
  6. Build the flavor base by adding fire roasted diced tomatoes.
  7. Season and simmer for 15 to 20 minutes.
  8. Cook the cabbage in a separate skillet until tender.
  9. Layer half of the cabbage in a casserole dish followed by half of the meat sauce.
  10. Repeat layers and top with cheese.
  11. Bake for 25 to 35 minutes until bubbly and golden.
  12. Let it rest before serving.

Notes
