  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • Optional: 1/2 tsp cinnamon or nutmeg
  • Substitutions: Use gluten-free 1:1 flour and plant-based milk or butter if desired.

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9-inch round cake pan or cast iron skillet.
  2. Make the topping:
    In the pan, melt 1/4 cup butter and brown sugar over medium heat until smooth and bubbling. Remove from heat. Arrange peach slices in a decorative pattern on top of the caramel mixture.
  3. Make the cake batter:
    Cream 1/2 cup softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Add dry ingredients to the butter mixture in alternating additions with the milk. Mix until smooth.
  5. Stir in vanilla and optional cinnamon or nutmeg.
  6. Assemble and bake:
    Pour the cake batter over the peaches and smooth the top evenly.
  7. Bake for 40–45 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. Cool and flip:
    Let the cake rest for 10–15 minutes. Place a plate over the pan and carefully flip to invert the cake. Gently tap and lift the pan to release the peach topping.
  9. Serve warm with whipped cream, vanilla ice cream, or fresh mint if desired.

Notes

Great for showcasing fresh summer peaches. You can replace the peaches with nectarines, apples, or pears depending on the season. For a nutty twist, sprinkle chopped pecans over the caramel before adding the peaches.
