Instructions
- In a medium mixing bowl, pour in 2 cups of coconut milk. Add 1/2 cup chia seeds and 1–2 tablespoons of sweetener (if desired). Stir vigorously for 20–30 seconds.
- Let the mixture sit for 10–15 minutes, then stir again to break any clumps.
- Cover and refrigerate for at least 2 hours or overnight.
- Prepare the fruit and layer it with the chia pudding in serving glasses.
- Top with your choice of toppings and serve chilled.
Notes
For smoother pudding, blend the chia-coconut mixture before chilling. Adjust sweetness as needed.
