Description

Creamy, flavor-packed chicken meatballs simmered in a luxurious sun-dried tomato sauce.


Ingredients

  • 1 1/2 lbs ground chicken
  • 1/2 cup breadcrumbs
  • 1/3 cup Parmesan cheese, grated
  • 1 large egg
  • 3 cloves garlic, minced (for the meatballs)
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil (for searing)
  • 2 tbsp butter (for the sauce)
  • 3 cloves garlic, minced (for the sauce)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning (for the sauce)
  • 1/2 tsp red pepper flakes (optional, for the sauce)
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated (for the sauce)
  • 2 cups baby spinach (optional)
  • Fresh parsley or basil, for garnish

Instructions

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, 1/3 cup grated Parmesan, egg, 3 minced garlic cloves, 1 tsp Italian seasoning, red pepper flakes, salt, and black pepper. Mix gently.
  2. Form the mixture into 1 1/2-inch meatballs. Aim for even sizes for consistent cooking.
  3. Heat olive oil in a large skillet over medium-high heat. Sear meatballs until browned, about 2–3 minutes per side. Remove and set aside.
  4. In the same skillet, melt butter. Add remaining garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook until fragrant.
  5. Pour in heavy cream and chicken broth, stir to deglaze. Simmer for 3–5 minutes until slightly thickened.
  6. Stir in 1/2 cup grated Parmesan until melted and sauce thickens.
  7. Return meatballs to the skillet, cover partially, and simmer for 10–12 minutes until cooked through.
  8. If using baby spinach, stir it into the sauce just before serving.
  9. Garnish with parsley or basil and serve immediately.

Notes

Browning meatballs adds flavor; use oil-packed sun-dried tomatoes for best results.
