Description

Tender chicken meatballs simmered in a rich, garlicky sun-dried tomato cream sauce, perfect for weeknight dinners and special occasions.


Ingredients

  • 2 lbs ground chicken
  • 2 large eggs, slightly beaten
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 cup seasoned panko crumbs
  • 3/4 cup grated Parmesan cheese
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp paprika
  • 5 Tbsp butter
  • 4 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1/41/2 tsp red pepper flakes, to taste
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 1/4 cup white grape juice
  • 1 1/2 cups low-sodium chicken broth

Instructions

  1. In a large mixing bowl, combine ground chicken, beaten eggs, minced garlic, olive oil, seasoned panko crumbs, Parmesan, onion powder, salt, black pepper, and paprika. Mix gently until just combined.
  2. Scoop portions of the mixture into balls and place them on a parchment-lined baking sheet.
  3. Preheat oven to 400°F (204°C). Bake meatballs for 20 minutes or until they reach an internal temperature of 165°F (74°C).
  4. Melt butter in a skillet over medium heat, add minced garlic and sauté until fragrant.
  5. Add Italian seasoning and red pepper flakes, then stir in the chopped sun-dried tomatoes.
  6. Pour in white grape juice and reduce slightly, then add chicken broth and simmer for 3-5 minutes.
  7. Combine meatballs with the sauce in the skillet and let them simmer together for 2-3 minutes.
  8. Adjust seasoning if needed, then serve hot over pasta, polenta, or mashed potatoes, garnished with extra Parmesan.

Notes

For a lighter option, serve meatballs over zucchini noodles. Can be made in advance and frozen for later use.
