- 2 chicken breasts
- 8 oz pasta (fettuccine or your choice)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 cup Parmesan cheese, grated
- Olive oil
- Salt and pepper
- Fresh basil, for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper and cook until golden brown on both sides and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant. Add sun-dried tomatoes and cook for another 2 minutes.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer, then add Parmesan cheese, stirring until melted and smooth.
- Slice the cooked chicken and return it to the skillet. Add the pasta and toss to coat everything in the creamy sauce.
- Serve warm, garnished with fresh basil.
Notes
For a lighter option, you can use half and half instead of heavy cream. Feel free to adjust the garlic and sun-dried tomatoes to your taste.
