- 2 large Chicken Breasts, boneless, skinless, sliced thinly
- Salt and Pepper, to taste
- 2 tbsp Olive Oil, for searing
- 3 cloves Garlic, minced
- 1/3 cup Sun-Dried Tomatoes, chopped
- 1/2 cup Chicken Broth
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese, freshly grated
- 1 tsp Italian Seasoning
- 1/2 tsp Crushed Red Pepper Flakes (optional)
- 8 oz Pasta, such as penne, rigatoni, or fettuccine
- Fresh Basil, for garnish
Instructions
- Season the sliced chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until browned, about 4-5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Stir in the sun-dried tomatoes and chicken broth. Bring to a simmer.
- Lower the heat and add in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until combined and thickened.
- Meanwhile, cook your chosen pasta according to the package instructions. Drain and set aside.
- Return the chicken to the skillet and stir to coat it in the sauce. Add the cooked pasta and toss everything together until well combined.
- Garnish with fresh basil before serving.
Notes
Serve hot, garnished with fresh basil and extra Parmesan. Pairs well with a simple green salad or garlic bread. Store leftovers in an airtight container for up to 3 days.
