- 1 lb boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 pita breads
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Fresh parsley for garnish
Instructions
- Marinate the chicken by mixing olive oil, oregano, garlic powder, salt, and pepper in a bowl. Coat the chicken thighs and let them marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes on each side until golden brown and cooked through.
- Prepare the tzatziki sauce by mixing Greek yogurt, crumbled feta cheese, lemon juice, minced garlic, salt, and pepper in another bowl until smooth.
- Slice the cooked chicken into strips.
- Assemble the gyros by spreading tzatziki on each pita, adding sliced chicken, cherry tomatoes, diced cucumber, and sliced red onion. Roll the pita and enjoy.
Notes
For extra flavor, marinate the chicken longer, ideally overnight. Skipping fresh parsley will diminish the garnish’s appeal.
