Description A quick and flavorful Mediterranean Chicken Stir Fry combining seared chicken, crisp vegetables, Kalamata olives, and tangy feta, ready in about 30 minutes.

Ingredients

  • 1.5 lbs chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 tablespoons extra virgin olive oil, divided
  • Salt & black pepper, to taste
  • 2 medium zucchini, sliced into half-moons
  • 2 red bell peppers, diced into chunks
  • 1 large red onion, sliced into strips
  • 2 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves garlic, minced
  • ¼ cup sun-dried tomatoes, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • 1 lemon, juice only
  • ½ cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, optional garnish

Instructions

  1. Prep all ingredients before heating the pan.
  2. Season the chicken with salt, pepper, and half of the dried oregano.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  4. Sear the chicken in batches for 6–8 minutes until cooked through.
  5. Remove chicken, tent with foil, and keep warm.
  6. Add remaining olive oil to the skillet, sauté onion and garlic until translucent.
  7. Add zucchini, bell peppers, and sun-dried tomatoes; sauté until tender-crisp.
  8. Return chicken to skillet, add cherry tomatoes, olives, remaining herbs, and lemon juice; cook until warmed through.
  9. Adjust seasoning, sprinkle feta, and garnish with parsley before serving.
