Description
A quick and flavorful Mediterranean Chicken Stir Fry combining seared chicken, crisp vegetables, Kalamata olives, and tangy feta, ready in about 30 minutes.

- 1.5 lbs chicken breasts, boneless & skinless, cut into bite-sized pieces
- 3 tablespoons extra virgin olive oil, divided
- Salt & black pepper, to taste
- 2 medium zucchini, sliced into half-moons
- 2 red bell peppers, diced into chunks
- 1 large red onion, sliced into strips
- 2 cups cherry tomatoes, halved
- 1 cup Kalamata olives, pitted and halved
- 4 cloves garlic, minced
- ¼ cup sun-dried tomatoes, chopped
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- ½ teaspoon dried thyme
- 1 lemon, juice only
- ½ cup feta cheese, crumbled
- 2 tablespoons fresh parsley, optional garnish
Instructions
- Prep all ingredients before heating the pan.
- Season the chicken with salt, pepper, and half of the dried oregano.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Sear the chicken in batches for 6–8 minutes until cooked through.
- Remove chicken, tent with foil, and keep warm.
- Add remaining olive oil to the skillet, sauté onion and garlic until translucent.
- Add zucchini, bell peppers, and sun-dried tomatoes; sauté until tender-crisp.
- Return chicken to skillet, add cherry tomatoes, olives, remaining herbs, and lemon juice; cook until warmed through.
- Adjust seasoning, sprinkle feta, and garnish with parsley before serving.
Notes
Don’t overcook the vegetables to maintain their crispness. Customize with fresh herbs for added flavor.
