Ingredients

  • 2 cans chickpeas
  • 2 tbsp olive oil
  • 1 zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 2 tbsp parsley

Instructions

  1. Drain and rinse the chickpeas, patting them dry with a towel.
  2. Trim and slice the zucchini, core and slice the bell peppers, peel and slice the onion, halve the cherry tomatoes, and mince the garlic.
  3. Heat 1–2 tablespoons of olive oil in a large skillet over medium-high heat.
  4. Add the chickpeas in a single layer and let them brown for a couple of minutes before tossing until golden and slightly crisp.
  5. Push the chickpeas to the side of the pan and add more oil if necessary, then add onion and garlic, sautéing for 2–3 minutes.
  6. Add zucchini and bell peppers, seasoning with paprika, oregano, cumin, salt and pepper, cook until tender-crisp (about 5–7 minutes).
  7. Add cherry tomatoes in the last 1–2 minutes just to warm them, and return chickpeas to combine.
  8. Adjust seasoning, finish with parsley, and serve hot.
