Ingredients

  • 1 1/2 lbs shrimp (peeled and deveined)
  • 3 tbsp olive oil
  • 4 cloves garlic, finely minced
  • 1 tsp paprika (smoked or sweet)
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon (about 2 – 3 tbsp)
  • 2 tbsp fresh parsley, chopped (plus more for garnish)

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt, pepper, paprika, and oregano.
  2. Heat a large skillet over medium-high heat and add 2–3 tablespoons of olive oil.
  3. Once the oil shimmers, add the garlic and sauté for 30–45 seconds until fragrant but not browned.
  4. Add the seasoned shrimp in a single layer and cook 1–2 minutes per side until pink and opaque; avoid overcooking.
  5. Squeeze the lemon juice over the cooked shrimp, toss to coat, and adjust seasoning.
  6. Remove from heat, stir in chopped parsley, garnish with more parsley and a lemon wedge, and serve immediately.
