Ingredients

  • 1½ cups shredded Cheddar cheese
  • ½ cup unsalted butter, softened
  • 1¼ cups cooked beef, finely chopped
  • 1 cup all-purpose flour
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 pound lean ground beef
  • 1 tablespoon all-purpose flour (additional)
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat and cook diced onion until translucent.
  2. Add minced garlic and cook for 30-60 seconds, then add ground beef and cook until browned.
  3. Stir in smoked beef and cook for 2-3 minutes; sprinkle with flour and stir to coat.
  4. Pour in beef broth, stirring continuously until thickened. Add mustard, paprika, and pepper; simmer for 5-7 minutes.
  5. Remove from heat and stir in parsley. Let the filling cool to room temperature.
  6. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  7. Roll out puff pastry and cut into 9 equal squares per sheet.
  8. Place 1 to 1.5 tablespoons of filling in the center of each square, seal edges firmly.
  9. Transfer to prepared baking sheet, brush with egg wash, and bake for 18-22 minutes until golden.
  10. Cool on a wire rack for 5-10 minutes before serving.

Notes

For best results, let filling cool completely before filling pastry. These puffs can be served warm with sauces such as honey mustard or tomato chutney.
