Description

Ingredients

  • 1 Butterball turkey breast roast (39 lbs), thawed
  • 1 tablespoon olive oil or nonstick spray
  • Salt, to taste
  • Pepper, freshly cracked, to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 cup broth, water, or non-alcoholic white wine
  • 2 cups low sodium chicken broth
  • 1 yellow onion, roughly chopped
  • 2 stalks celery, roughly chopped
  • 2 carrots, roughly chopped
  • 2 cloves minced garlic
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • Fresh chopped parsley or chives, for garnish

Instructions

  1. Unwrap and pat the turkey breast roast dry for better browning.
  2. Mix softened butter, smoked paprika, garlic powder, dried thyme, dried rosemary, black pepper, and salt to create herb butter.
  3. Spread the herb butter all over the turkey breast roast, rubbing it in well.
  4. Place chopped onion, celery, carrots, and minced garlic in the slow cooker.
  5. Pour 2 cups of chicken broth over the vegetables.
  6. Place the butter-rubbed turkey breast on top of the vegetables.
  7. Secure the lid and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
  8. Check the internal temperature; it should be 165°F (74°C).
  9. Remove the turkey and let it rest for 15-20 minutes.
  10. Strain the liquid and cooked vegetables for gravy.
  11. Skim off excess fat and simmer the drippings in a saucepan.
  12. Mix cornstarch with cold water and whisk into the simmering drippings until thick.
  13. Adjust seasoning as needed.
  14. Slice the turkey and serve with gravy and garnish as desired.

Notes

Let the turkey rest before slicing to allow juices to redistribute. Use leftovers in sandwiches or salads.
