- 1 lb lean ground chicken
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped parsley
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground chicken, Parmesan cheese, garlic, breadcrumbs, parsley, egg, salt, pepper, and Italian herbs.
- Mix until well combined, then shape the mixture into a loaf.
- Place the meatloaf in a greased baking dish and brush the top with olive oil.
- Bake in the preheated oven for 45-55 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
- Let it rest for 10 minutes before slicing. Serve with your favorite sides.
Notes
For added moisture, consider adding finely chopped onions or bell peppers. Avoid overmixing to keep the meatloaf tender.
