- 2 whole bulbs garlic
- 2 teaspoons olive oil
- 8 ounces (226 grams) unsalted butter, at room temperature
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper (optional)
- A tiny pinch of red pepper flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C). Slice off the top of each garlic bulb to expose the cloves, drizzle with olive oil, and season with salt and pepper. Wrap in foil and roast for 35 to 45 minutes.
- Allow roasted garlic to cool for 10-15 minutes, then squeeze the cloves out into a bowl and mash into a paste.
- In a mixing bowl, combine softened butter with mashed garlic, parsley, salt, black pepper, and red pepper flakes. Mix until well-blended.
- Serve immediately or store in an airtight container in the fridge for up to 3-4 days, or freeze for up to 2 months.
Notes
Use fresh garlic for the best flavor and be sure the butter is at room temperature for easy mixing.
