Ingredients
8 ounces fresh goat cheese log, softened
4 ounces cream cheese, softened
1 tablespoon honey
1/2 cup finely chopped crispy cooked beef bacon
1/4 cup finely chopped pecans
1/4 cup dried cranberries, chopped
1 tablespoon fresh rosemary, minced
1 cup arugula, for garnish

Instructions
Preheat oven to 375°F (190°C). Lay beef bacon strips on a parchment-lined baking sheet and bake for 15–25 minutes until crisp.
Drain bacon on paper towels and cool, then finely chop to yield 1/2 cup, reserving 1/4 cup for mixing into the cheese mixture and 1/4 cup for coating.
Lightly toast the pecans in a skillet over medium-low heat for 3–5 minutes or in the oven for 5–7 minutes until fragrant.
In a mixing bowl, combine softened cream cheese and crumbled goat cheese, beating until smooth. Add honey, 1/4 cup chopped bacon, dried cranberries, and rosemary, mixing evenly.
Spoon cheese mixture onto plastic wrap and shape into a log, then chill in the refrigerator for at least 2 hours.
Unwrap the log and roll in the mixture of reserved bacon and toasted pecans, pressing lightly.
Garnish with arugula and serve with assorted crackers or crostini at room temperature for about 10–15 minutes before serving.
