- 8 ounces fresh goat cheese log, softened
- 4 ounces cream cheese, softened
- 1 tablespoon honey
- 1/2 cup finely chopped crispy cooked beef bacon
- 1/4 cup finely chopped pecans
- 1/4 cup dried cranberries, chopped
- 1 tablespoon fresh rosemary, minced
- 1 cup arugula, for garnish
- Assorted crackers or crostini, for serving
Instructions
- Preheat oven to 375°F (190°C). Lay beef bacon strips on a parchment-lined baking sheet and bake for 15–25 minutes until crisp.
- Drain bacon on paper towels and cool, then finely chop to yield 1/2 cup, reserving 1/4 cup for mixing into the cheese mixture and 1/4 cup for coating.
- Lightly toast the pecans in a skillet over medium-low heat for 3–5 minutes or in the oven for 5–7 minutes until fragrant.
- In a mixing bowl, combine softened cream cheese and crumbled goat cheese, beating until smooth. Add honey, 1/4 cup chopped bacon, dried cranberries, and rosemary, mixing evenly.
- Spoon cheese mixture onto plastic wrap and shape into a log, then chill in the refrigerator for at least 2 hours.
- Unwrap the log and roll in the mixture of reserved bacon and toasted pecans, pressing lightly.
- Garnish with arugula and serve with assorted crackers or crostini at room temperature for about 10–15 minutes before serving.
Notes
For a polished presentation, serve on a wooden board with small bowls of honey or jam for customization.
