- 8 ounces fresh goat cheese log, softened
- 4 ounces cream cheese, softened
- 1 tablespoon honey
- 1/2 cup finely chopped crispy cooked beef bacon
- 1/4 cup finely chopped pecans
- 1/4 cup dried cranberries, chopped
- 1 tablespoon fresh rosemary, minced
- 1 cup arugula, for garnish
- Assorted crackers or crostini, for serving
Instructions
- Preheat your oven to 375°F (190°C). Lay beef bacon strips on a parchment-lined baking sheet and bake for 15-25 minutes until crispy. Drain and cool, then chop finely.
- Toast the chopped pecans in a skillet over medium-low heat for 3-5 minutes or in the oven for 5-7 minutes until fragrant.
- In a mixing bowl, combine cream cheese and goat cheese, mixing until smooth. Add honey, 1/4 cup beef bacon, cranberries, and rosemary, and mix well.
- Spoon the cheese mixture onto plastic wrap and shape into a log. Wrap tightly and refrigerate for at least 2 hours.
- Unwrap the log and roll in the remaining beef bacon and toasted pecans to coat.
- Garnish with arugula and serve with crackers or crostini, letting it sit at room temperature for 10-15 minutes before serving.
