Ingredients
2 medium apples, peeled and diced
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup granulated sugar
1/2 cup milk
1 large egg
Oil for frying
1 cup powdered sugar
2 tablespoons milk (for glaze)
1 teaspoon vanilla extract

Instructions
In a mixing bowl, combine the flour, baking powder, cinnamon, salt, and sugar.
In another bowl, whisk together the milk and egg.
Gradually mix the wet ingredients into the dry ingredients until just combined. Fold in the diced apples.
Heat oil in a deep frying pan over medium heat.
Drop spoonfuls of the batter into the hot oil and fry until golden brown on all sides.
Remove and drain on paper towels.
For the vanilla glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl.
Drizzle the glaze over the warm fritters and serve.
