Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla extract until smooth.
  3. In another bowl, sift together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Pour the batter into greased mini loaf pans, filling each about 2/3 full.
  6. Sprinkle the cinnamon-sugar mixture over the batter and swirl lightly with a knife or skewer.
  7. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pans for about 10 minutes before transferring to a cooling rack to cool completely.
