  • 2 tablespoons full-fat cream cheese, softened
  • 1 tablespoon powdered erythritol for frosting
  • 1/2 teaspoon unsweetened almond milk or heavy cream for frosting
  • 1/4 teaspoon vanilla extract for frosting

Instructions

  1. Grab a microwave-safe mug (12-14 oz). Lightly grease if you plan to invert the cake later.
  2. In the mug, combine the dry ingredients: almond flour, granulated erythritol, baking powder, and salt. Whisk thoroughly.
  3. In a separate bowl, melt the unsalted butter, then add the egg, unsweetened almond milk, and vanilla extract. Whisk until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. In a small bowl, combine melted butter, powdered erythritol, and ground cinnamon to create the cinnamon swirl mixture.
  6. Dollop half of the cinnamon swirl mixture over the batter and gently swirl it with a toothpick.
  7. Microwave for 60-90 seconds, checking after 60 seconds. Avoid overcooking.
  8. Let the cake cool in the mug for 2-3 minutes.
  9. Prepare the frosting by mixing softened cream cheese, powdered erythritol, unsweetened almond milk, and vanilla extract until smooth.
