- 1/4 teaspoon vanilla extract for frosting
Instructions
- Grab a microwave-safe mug (12-14 oz). Lightly grease if you plan to invert the cake later.
- In the mug, combine the dry ingredients: almond flour, granulated erythritol, baking powder, and salt. Whisk thoroughly.
- In a separate bowl, melt the unsalted butter, then add the egg, unsweetened almond milk, and vanilla extract. Whisk until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- In a small bowl, combine melted butter, powdered erythritol, and ground cinnamon to create the cinnamon swirl mixture.
- Dollop half of the cinnamon swirl mixture over the batter and gently swirl it with a toothpick.
- Microwave for 60-90 seconds, checking after 60 seconds. Avoid overcooking.
- Let the cake cool in the mug for 2-3 minutes.
- Prepare the frosting by mixing softened cream cheese, powdered erythritol, unsweetened almond milk, and vanilla extract until smooth.
- Spoon the frosting over the warm cake and sprinkle with cinnamon if desired.
- Serve immediately and enjoy!
