Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish.
- Melt 1 cup of unsalted butter over low heat and let cool slightly.
- Add 2 cups of granulated sugar to the melted butter and mix until smooth.
- Incorporate 4 large eggs, one at a time, mixing well after each addition.
- Stir in 1 teaspoon vanilla extract.
- In a separate bowl, whisk together 1 cup of all-purpose flour, 1 cup of unsweetened cocoa powder, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1 tablespoon instant coffee granules.
- Gradually add the dry ingredients to the wet mixture, stirring gently.
- Fold in 1/2 cup of semi-sweet chocolate chips if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Let cool in the pan for 15-20 minutes, then remove and cool completely on a wire rack.
- To make the frosting, beat 1/2 cup softened unsalted butter until creamy, then add 2 cups powdered sugar and 1/4 cup cocoa powder slowly.
- Mix in 2 tablespoons milk and 1 teaspoon vanilla extract, and optionally 1 tablespoon instant coffee granules.
- Beat until fluffy, adjusting with more milk if necessary.
- Once brownies are cool, frost them and cut into squares or rectangles.
Notes
Quality cocoa powder enhances the flavor. Allow brownies to cool completely before frosting for best results.
