- 1/4 cup Butter (melted and cooled)
- 1 tsp Vanilla extract
- 1 Egg
- 1/3 cup Granulated sugar
- 1/2 cup Brown sugar
- 1/2 tsp Kosher salt
- 1/2 cup Greek yogurt
- 1/2 cup Cocoa powder
- 1 1/2 cups Canned pumpkin puree
- 1 cup Flour
- 1 tsp Baking soda
- 1 cup Chocolate chips
Instructions
- Preheat an oven to 180°C (350°F) and prep a loaf pan with parchment paper.
- In a large mixing bowl, combine pumpkin puree, Greek yogurt, vanilla extract, cooled melted butter, kosher salt, egg, granulated sugar, brown sugar, and sifted cocoa powder. Mix until well combined.
- Add the flour and baking soda, stirring until almost combined.
- Fold in chocolate chips until just combined, ensuring no lumps of flour remain.
- Pour the batter into the prepared loaf pan and top with extra chocolate chips.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted comes out clean.
Notes
Store wrapped in plastic wrap or aluminum foil for freshness. Can be frozen for up to 3 months.
