Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan thoroughly and dust lightly with flour.
- In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy (about 3 to 5 minutes).
- Add the eggs one at a time, beating well after each addition; then stir in the vanilla extract.
- Mix in sour cream, fresh key lime juice, and lime zest until incorporated.
- Fold the dry ingredients into the wet mixture gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove to cool completely on a wire rack.
Notes
For a tangy glaze, mix powdered sugar with fresh key lime juice and drizzle over the cooled cake.
