Description

Moist and chocolatey banana muffins that are easy to make and perfect for breakfast or a late-night snack.


Ingredients

  • 2 ripe bananas, good and spotty
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas until well combined.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract, and mix until combined.
  6. Fold in the flour until just combined.
  7. Gently mix in the chocolate chips.
  8. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Let them cool slightly before transferring to a wire rack.

Notes

These muffins can also be made into a loaf by adjusting the baking time to 45-55 minutes.
