Description A comforting twist on traditional lasagna, this One Pot Lasagna Soup combines rich flavors and is easy to make in a single pot.

Ingredients

  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 1/2 yellow onion, diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 (14 oz) can crushed tomatoes
  • 32 oz chicken broth
  • 1 cup water
  • 2 tsp tomato paste
  • 8 lasagna noodles, broken into pieces
  • 1 cup frozen chopped spinach
  • 1/4 cup heavy cream
  • 4 slices mozzarella cheese
  • 1 cup ricotta cheese
  • Parmesan cheese, for garnish

Instructions

  1. In a large pot, cook the ground beef over medium-high heat until browned. Drain excess grease.
  2. Add garlic and onion, and cook for 5 minutes until softened.
  3. Stir in garlic powder, onion powder, basil, oregano, salt, and pepper.
  4. Add crushed tomatoes, chicken broth, water, and tomato paste. Mix in broken lasagna noodles.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  6. Stir in frozen spinach and heavy cream, and cook uncovered for 5 minutes.
  7. Serve by placing mozzarella cheese at the bottom of bowls, ladle soup over it, and top with ricotta and Parmesan cheese.
