Description
A comforting twist on traditional lasagna, this One Pot Lasagna Soup combines rich flavors and is easy to make in a single pot.
Ingredients

- 1 lb ground beef
- 3 cloves garlic, minced
- 1/2 yellow onion, diced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 (14 oz) can crushed tomatoes
- 32 oz chicken broth
- 1 cup water
- 2 tsp tomato paste
- 8 lasagna noodles, broken into pieces
- 1 cup frozen chopped spinach
- 1/4 cup heavy cream
- 4 slices mozzarella cheese
- 1 cup ricotta cheese
- Parmesan cheese, for garnish
Instructions
- In a large pot, cook the ground beef over medium-high heat until browned. Drain excess grease.
- Add garlic and onion, and cook for 5 minutes until softened.
- Stir in garlic powder, onion powder, basil, oregano, salt, and pepper.
- Add crushed tomatoes, chicken broth, water, and tomato paste. Mix in broken lasagna noodles.
- Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
- Stir in frozen spinach and heavy cream, and cook uncovered for 5 minutes.
- Serve by placing mozzarella cheese at the bottom of bowls, ladle soup over it, and top with ricotta and Parmesan cheese.
