  • 14 oz can crushed tomatoes
  • 32 oz chicken broth
  • 1 cup water
  • 2 tsp tomato paste
  • 6 oz lasagna noodles, broken
  • 1 cup frozen chopped spinach
  • 1/4 cup heavy cream
  • Ricotta cheese (for serving)

Instructions

  1. Prepare and measure ingredients: Dice the onion, mince the garlic, and break the lasagna noodles into pieces.
  2. Brown the ground beef: Heat a large pot over medium heat, add beef, and cook until well browned, about 6–8 minutes.
  3. Sauté garlic and onion: Add onion and garlic to the pot, sauté until the onion is softened, about 3–4 minutes.
  4. Add dried seasonings: Stir in garlic powder, onion powder, basil, oregano, salt, and pepper, cooking for 30–60 seconds.
  5. Add tomatoes, broth, and tomato paste: Pour in crushed tomatoes, chicken broth, and water; stir in tomato paste and bring to a simmer.
  6. Incorporate lasagna noodles and spinach: Add broken noodles and spinach, reduce heat, and cook until noodles are tender, about 8–12 minutes.
  7. Finish with heavy cream: Stir in heavy cream, simmer for an additional minute.
  8. Adjust seasoning and serve: Taste the soup, adjust salt and pepper as needed, then ladle into bowls and top with ricotta cheese.
