- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mulled wine (or red wine with spices)
- 1/2 cup buttermilk
- Zest of 1 orange
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking soda, baking powder, spices, and salt.
- In a separate bowl, cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla, mulled wine, buttermilk, and zests.
- Gradually mix in the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
For a twist, add walnuts or pecans for extra texture. This loaf can be made ahead and tastes better after a day.
