Ingredients
750 ml red wine
250 ml soda water
2 orange slices
1 cinnamon stick
4 cloves
2 star anise
1/4 cup honey or sugar
Cinnamon foam (optional)

Instructions
In a saucepan, combine red wine, orange slices, cinnamon stick, cloves, star anise, and honey or sugar. Heat gently until warm, but do not boil.
Once aromatic, simmer for about 10 minutes to allow flavors to meld. Stir occasionally.
Strain the mulled wine into a pitcher, removing solids.
In a glass, add mulled wine mixture and top with soda water to taste.
Garnish with cinnamon foam if desired. Serve warm and enjoy.

For a nonalcoholic version, substitute red wine with black tea or pomegranate juice. Adjust sweetness to taste.
