A healthy and delicious Mushroom and Tofu Stir-Fry that is quick to prepare and packed with protein and vitamins.
Ingredients

- 200g firm tofu
- 250g mushrooms (sliced)
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 cloves garlic (minced)
- 1 teaspoon ginger (grated)
- Vegetables of choice (e.g., bell peppers, broccoli, carrots)
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess moisture, then cut into cubes.
- Heat the vegetable oil in a pan over medium heat.
- Add the tofu and cook until golden brown and crisp on all sides.
- Add the sliced mushrooms to the pan and stir-fry for 3-4 minutes until they are soft.
- Add garlic and ginger, cooking for an additional minute.
- Add soy sauce and your choice of vegetables, and stir-fry until everything is heated through.
- Season with salt and pepper to taste before serving.
Notes
Press tofu for at least 15-30 minutes for a better texture. Feel free to mix and match with your favorite vegetables and serve over rice or noodles.
