Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 to 2 lbs total)
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons unsalted butter (divided)
  • 1 teaspoon sea salt (divided)
  • 1/2 teaspoon black pepper (divided)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried Italian seasoning
  • 8 ounces cremini mushrooms (thinly sliced)
  • 1 large shallot (finely minced)
  • 3 cloves garlic (minced)
  • 1/2 cup low sodium chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup freshly grated Asiago cheese (firm variety, plus more for garnish)
  • 1/4 cup freshly grated Parmesan cheese (optional for extra depth)
  • 1 teaspoon fresh thyme leaves (chopped or 1/2 teaspoon dried thyme)
  • Pinch of red pepper flakes (optional for a subtle kick)
  • Fresh parsley (chopped for garnish)

Instructions

  1. Place chicken breasts between plastic wrap and pound to even thickness.
  2. Pat dry and season with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  3. Clean and slice mushrooms.
  4. Mince shallot and garlic.
  5. Heat skillet, add olive oil and butter, then sear chicken for 4-6 minutes per side until golden brown and cooked through.
  6. Let chicken rest.
  7. In the same skillet, add butter and oil, sauté mushrooms until tender.
  8. Push mushrooms aside, cook shallots until translucent, then add garlic.
  9. Pour in chicken broth, scraping the bottom of the pan until reduced.
  10. Add cream, thyme, and red pepper flakes; simmer until thickened.
  11. Stir in grated Asiago and Parmesan cheese until melted.
  12. Slice or leave chicken whole, return to skillet and coat with sauce.
  13. Serve garnished with parsley and extra cheese.

Notes

Rest the chicken after cooking for juicier results. Use freshly grated cheese for the best melting texture.
