Description

A quick and easy dish that’s both tasty and healthy, perfect for busy weeknights.


Ingredients

Scale
  • 14 oz firm tofu, cubed
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Optional vegetables (bell peppers, broccoli, carrots, etc.)
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat olive oil in a pan over medium heat, add the tofu cubes, and cook until golden and crisp.
  3. Add minced garlic and grated ginger, sauté for another minute.
  4. Add sliced mushrooms and any optional vegetables, stir-fry until tender.
  5. Pour in soy sauce, season with salt and pepper, and toss everything together.
  6. Serve hot.

Notes

For added crunch, sprinkle sesame seeds on top before serving. Leftovers can be stored in an airtight container for up to three days.
