Ingredients

- 14 oz firm tofu, cubed
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Optional vegetables (bell peppers, broccoli, carrots, etc.)
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess moisture, then cut it into cubes.
- Heat olive oil in a pan over medium heat, add the tofu cubes, and cook until golden and crisp.
- Add minced garlic and grated ginger, sauté for another minute.
- Add sliced mushrooms and any optional vegetables, stir-fry until tender.
- Pour in soy sauce, season with salt and pepper, and toss everything together.
- Serve hot.
Notes
For added crunch, sprinkle sesame seeds on top before serving. Leftovers can be stored in an airtight container for up to three days.
