- ½ cup unsalted butter, cubed and very cold
- ¼ cup ice water
- 2 ½ cups fresh or frozen cranberries
- ½ cup chopped pecans or sliced almonds
- ½ cup granulated sugar
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ⅛ teaspoon salt
Instructions
- Prepare the pie crust by mixing flour and salt, cutting in butter until crumbly, then adding ice water to form a dough. Chill for 30 minutes.
- Roll out the chilled dough and transfer it to a pie plate, trim edges, and chill again for 15-20 minutes.
- Mix cranberries, nuts, and sugar to create the filling.
- In a separate bowl, cream butter and sugar, add eggs one at a time, then vanilla, flour, and salt until just combined to make the topping.
- Pour the cranberry filling into the pie crust, spread the topping mixture over the filling.
- Bake in a preheated oven at 375°F (190°C) for 45-55 minutes until golden brown.
- Cool for 3-4 hours before slicing and serving.
Notes
Serve with whipped cream or vanilla ice cream for a delightful treat. Can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
