  • ½ cup unsalted butter, cubed and very cold
  • ¼ cup ice water
  • 2 ½ cups fresh or frozen cranberries
  • ½ cup chopped pecans or sliced almonds
  • ½ cup granulated sugar
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ⅛ teaspoon salt

Instructions

  1. Prepare the pie crust by mixing flour and salt, cutting in butter until crumbly, then adding ice water to form a dough. Chill for 30 minutes.
  2. Roll out the chilled dough and transfer it to a pie plate, trim edges, and chill again for 15-20 minutes.
  3. Mix cranberries, nuts, and sugar to create the filling.
  4. In a separate bowl, cream butter and sugar, add eggs one at a time, then vanilla, flour, and salt until just combined to make the topping.
  5. Pour the cranberry filling into the pie crust, spread the topping mixture over the filling.
  6. Bake in a preheated oven at 375°F (190°C) for 45-55 minutes until golden brown.
  7. Cool for 3-4 hours before slicing and serving.

Notes
