Description
This nectarine upside-down cake features caramelized nectarines layered beneath a fluffy vanilla cake. A stunning and delicious dessert perfect for late summer or any time you want a fruity treat.

- 2–3 nectarines, sliced
- 2 tbsp butter (for caramel base)
- ¼ cup brown sugar
- ½ cup butter (softened, for batter)
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- Pinch of salt
- ½ cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a round cake pan.
- In the pan, melt 2 tbsp butter and mix with brown sugar to form a caramel base. Let it cool slightly.
- Arrange sliced nectarines in a decorative pattern over the caramel base.
- In a bowl, cream ½ cup softened butter with sugar until fluffy. Beat in eggs and vanilla.
- In another bowl, mix flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Pour the batter over the nectarines in the pan.
- Bake for 35–40 minutes or until a toothpick comes out clean.
- Cool for 10 minutes, then invert onto a serving plate.
Notes
Serve warm or at room temperature. Add a dollop of whipped cream or vanilla ice cream for an extra-indulgent treat.
