Description

This nectarine upside-down cake features caramelized nectarines layered beneath a fluffy vanilla cake. A stunning and delicious dessert perfect for late summer or any time you want a fruity treat.

  • 23 nectarines, sliced
  • 2 tbsp butter (for caramel base)
  • ¼ cup brown sugar
  • ½ cup butter (softened, for batter)
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • Pinch of salt
  • ½ cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a round cake pan.
  2. In the pan, melt 2 tbsp butter and mix with brown sugar to form a caramel base. Let it cool slightly.
  3. Arrange sliced nectarines in a decorative pattern over the caramel base.
  4. In a bowl, cream ½ cup softened butter with sugar until fluffy. Beat in eggs and vanilla.
  5. In another bowl, mix flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk.
  7. Pour the batter over the nectarines in the pan.
  8. Bake for 35–40 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes, then invert onto a serving plate.

Notes

Serve warm or at room temperature. Add a dollop of whipped cream or vanilla ice cream for an extra-indulgent treat.
