Ingredients

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp sugar
  • 6 tbsp melted butter
  • 1 ½ cups cantaloupe purée (about ½ ripe cantaloupe)
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup heavy cream, cold
  • 1 packet (2 ¼ tsp) unflavored gelatin
  • 2 tbsp cold water
  • Whipped cream
  • Fresh cantaloupe balls
  • Honey (for drizzling)
  • Fresh mint leaves

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until well mixed.
  2. Firmly press the mixture into a 9-inch pie dish to form a crust and chill in the refrigerator.
  3. Sprinkle the gelatin over cold water in a small bowl and let it bloom for 5 minutes.
  4. Microwave the bloomed gelatin for 10-15 seconds until dissolved and cool slightly.
  5. Puree the cantaloupe until smooth, measuring 1 ½ cups for the filling.
  6. In a large bowl, beat cream cheese and granulated sugar until smooth.
  7. Add lemon juice, vanilla extract, and cantaloupe puree to the cream cheese mixture and mix until combined.
  8. Stir in the cooled gelatin until evenly distributed.
  9. In a separate bowl, whip heavy cream to stiff peaks and gently fold it into the cantaloupe mixture.
  10. Pour the filling into the prepared crust, smooth out the surface, and refrigerate for at least 4 hours until set.
  11. Before serving, decorate with whipped cream, cantaloupe balls, honey drizzle, and mint leaves.
