- 6 tbsp melted butter
- 1 ½ cups cantaloupe purée (about ½ ripe cantaloupe)
- 8 oz cream cheese, softened
- ½ cup granulated sugar
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1 cup heavy cream, cold
- 1 packet (2 ¼ tsp) unflavored gelatin
- 2 tbsp cold water
- Whipped cream
- Fresh cantaloupe balls
- Honey (for drizzling)
- Fresh mint leaves
Instructions
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until well mixed.
- Firmly press the mixture into a 9-inch pie dish to form a crust and chill in the refrigerator.
- Sprinkle the gelatin over cold water in a small bowl and let it bloom for 5 minutes.
- Microwave the bloomed gelatin for 10-15 seconds until dissolved and cool slightly.
- Puree the cantaloupe until smooth, measuring 1 ½ cups for the filling.
- In a large bowl, beat cream cheese and granulated sugar until smooth.
- Add lemon juice, vanilla extract, and cantaloupe puree to the cream cheese mixture and mix until combined.
- Stir in the cooled gelatin until evenly distributed.
- In a separate bowl, whip heavy cream to stiff peaks and gently fold it into the cantaloupe mixture.
- Pour the filling into the prepared crust, smooth out the surface, and refrigerate for at least 4 hours until set.
- Before serving, decorate with whipped cream, cantaloupe balls, honey drizzle, and mint leaves.
Notes
Use ripe cantaloupe for the best flavor. Ensure all ingredients are well chilled for perfect texture.
