Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, melt 2 tablespoons butter over medium heat. Add yellow squash and onion, season with 1 teaspoon salt, and sauté for about 10 minutes until squash is tender and onions are translucent.
- In a large mixing bowl, combine sautéed vegetables with sour cream, mayonnaise, 1/2 cup cheddar cheese, 1/4 cup Swiss cheese, 1/4 cup parmesan cheese, beaten egg, 1/2 teaspoon salt, and black pepper. Stir until well blended.
- Transfer squash mixture into a greased baking dish and spread evenly.
- Sprinkle remaining cheddar, Swiss, and parmesan cheeses over the mixture.
