  • 1 1/2 teaspoons salt, divided
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 3/4 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Swiss cheese, divided
  • 1/2 cup shredded parmesan cheese, divided
  • 1 large egg, lightly beaten
  • 1/2 teaspoon black pepper
  • 32 buttery round crackers, crushed

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, melt 2 tablespoons butter over medium heat. Add yellow squash and onion, season with 1 teaspoon salt, and sauté for about 10 minutes until squash is tender and onions are translucent.
  3. In a large mixing bowl, combine sautéed vegetables with sour cream, mayonnaise, 1/2 cup cheddar cheese, 1/4 cup Swiss cheese, 1/4 cup parmesan cheese, beaten egg, 1/2 teaspoon salt, and black pepper. Stir until well blended.
  4. Transfer squash mixture into a greased baking dish and spread evenly.
  5. Sprinkle remaining cheddar, Swiss, and parmesan cheeses over the mixture.
  6. Crush crackers and sprinkle over the cheese layer. Melt the remaining 4 tablespoons butter and drizzle over the top.
  7. Bake for 25–30 minutes until the top is golden brown and bubbly. Serve hot and enjoy.
