A warm, creamy, and easy one-pan meal featuring tender seared chicken in a silky garlic-cream sauce with vibrant broccoli and sweet carrots.

- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil or butter
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half for a lighter version)
- 1 tsp Italian seasoning
- 1 cup broccoli florets
- 1 cup baby carrots (or sliced carrots)
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Take the chicken breasts out of the fridge about 15–20 minutes before cooking.
- Pat the chicken dry and season with salt and pepper.
- Heat olive oil or butter in a large skillet over medium-high heat and sear the chicken for 5–6 minutes per side until golden brown. Remove chicken and set aside.
- Reduce heat to medium, add minced garlic, and sauté for 30 seconds.
- Deglaze the skillet with chicken broth, scraping up the browned bits.
- Stir in the heavy cream and Italian seasoning, bringing to a gentle simmer.
- Add broccoli and carrots to the sauce, cover, and simmer for 7–10 minutes until vegetables are tender.
- Return the seared chicken to the skillet, spoon sauce over the chicken, cover, and simmer for another 3–4 minutes until cooked through.
- Garnish with chopped parsley and serve hot.
Notes
If chicken breasts are thick, butterfly or pound them to cook evenly. Use a meat thermometer for doneness (165°F / 74°C). For a lighter sauce, use half-and-half or Greek yogurt.
