Ingredients
2 lbs beef chuck, cubed
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
4 carrots, sliced
3 potatoes, diced
8 oz mushrooms, sliced
4 cups beef broth
1 tablespoon tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
