Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 8 oz mushrooms, sliced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Prep all ingredients by patting the beef dry and seasoning with salt and pepper. Chop onion, mince garlic, slice carrots, dice potatoes, and slice mushrooms.
  2. In a large pot, heat olive oil over medium-high heat and sear seasoned beef cubes in batches for 3-4 minutes per side. Remove beef and set aside.
  3. Add chopped onion to the pot and sauté for 5-7 minutes, then stir in minced garlic and tomato paste, cooking for an additional 1-2 minutes.
  4. Return seared beef to the pot, pour in beef broth, add carrots, potatoes, thyme, and rosemary. Stir to combine.
  5. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally.
  6. In the last 15-20 minutes, add sliced mushrooms and cook until tender. Adjust seasoning with salt and pepper before serving.
  7. Let the stew rest for 10-15 minutes before serving. Garnish with fresh parsley if desired.
