- 2 lbs beef chuck, cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 8 oz mushrooms, sliced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Prep all ingredients by patting the beef dry and seasoning with salt and pepper. Chop onion, mince garlic, slice carrots, dice potatoes, and slice mushrooms.
- In a large pot, heat olive oil over medium-high heat and sear seasoned beef cubes in batches for 3-4 minutes per side. Remove beef and set aside.
- Add chopped onion to the pot and sauté for 5-7 minutes, then stir in minced garlic and tomato paste, cooking for an additional 1-2 minutes.
- Return seared beef to the pot, pour in beef broth, add carrots, potatoes, thyme, and rosemary. Stir to combine.
- Bring to a gentle boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally.
- In the last 15-20 minutes, add sliced mushrooms and cook until tender. Adjust seasoning with salt and pepper before serving.
- Let the stew rest for 10-15 minutes before serving. Garnish with fresh parsley if desired.

To enhance flavor, consider marinating the beef overnight or adding a splash of red wine during cooking.
