- 36 Oreo cookies, finely crushed
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 1 cup heavy cream
- 1/2 cup lemon juice, freshly squeezed
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract

Instructions
- Crush the Oreo cookies using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin until finely ground.
- Melt the butter in the microwave or in a saucepan over low heat until completely liquid.
- Combine the crushed Oreo crumbs with the melted butter, mixing until evenly moistened.
- Press the Oreo mixture firmly into the bottom of a 9-inch springform pan or pie dish to form an even crust. Chill in the refrigerator for at least 30 minutes, or freeze for 15 minutes if in a hurry.
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the sweetened condensed milk, beating on low speed until well combined.
- Slowly pour in the lemon juice and add the lemon zest. Mix until blended.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the lemon cream cheese mixture.
- Pour the lemon cream filling evenly over the chilled Oreo crust and smooth the top with a spatula.
- Cover with plastic wrap and refrigerate for at least 4 to 6 hours or preferably overnight.
- Once set, remove the sides of the springform pan and garnish as desired before slicing and serving chilled.
Notes
For best flavor, use freshly squeezed lemon juice and zest. Adjust sweetness by reducing the amount of sweetened condensed milk if desired.
