Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and sauté until soft.
  2. Stir in the flour and cook for another minute.
  3. Gradually add the chicken broth, stirring continuously to prevent lumps.
  4. Add the diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and cheese until melted.
  6. Add crumbled bacon, salt, and pepper to taste.
  7. Serve hot, garnished with chives.

Notes

For a thicker soup, mash some of the potatoes while cooking. Experiment with toppings like sour cream or green onions for a fun twist.
