- 4 large russet potatoes, peeled and diced
- 1/2 cup chopped onion
- 1/4 cup butter
- 1/2 cup all-purpose flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Chives for garnish
Instructions
- In a large pot, melt butter over medium heat. Add onions and sauté until soft.
- Stir in the flour and cook for another minute.
- Gradually add the chicken broth, stirring continuously to prevent lumps.
- Add the diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and cheese until melted.
- Add crumbled bacon, salt, and pepper to taste.
- Serve hot, garnished with chives.
Notes
For a thicker soup, mash some of the potatoes while cooking. Experiment with toppings like sour cream or green onions for a fun twist.
