Ingredients

  • 2 medium sweet potatoes, peeled (optional) and cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked paprika is optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch (for extra crispiness)

Instructions

  1. Preheat your oven to 425°F (220°C) and line two large baking sheets with parchment paper.
  2. Wash, peel (optional), and cut sweet potatoes into uniform 1/4 to 1/2 inch thick planks, then into fry shapes.
  3. Soak the cut fries in cold water for at least 30 minutes, then drain and dry thoroughly.
  4. Toss the dried fries with olive oil until evenly coated.
  5. Mix garlic powder, paprika, salt, and black pepper in a small bowl and sprinkle over fries, tossing to coat.
  6. Sprinkle cornstarch over the seasoned fries and toss again to coat evenly.
  7. Spread fries in a single layer on the baking sheets and bake for 15 minutes without disturbing.
  8. Flip fries after 15 minutes, rotate trays, and bake for another 10-15 minutes until golden brown and crispy.
  9. Remove from oven, serve hot with your favorite dipping sauce.
